Sourdough Discard Egg Bake



This recipe was born from me wanting to use up my starter without just tossing it. I thought hey – what’s the worst that can happen just baking it. So I went for it 🤠 and every single kid loves it! Winner!


It’s such a versatile recipe. Truly it can be as simple as starter and eggs. Anything else you want to add is just a bonus! It also works as a pizza "crust"!


Ingredients:

  • Sourdough discard (unfed)

  • Eggs (enough to cover pan)

  • Salt + Pepper


Optional add ons:

  • Olives

  • Onions

  • Sausage (any meat would work!)

  • Cheese


Directions:

  1. Cover your cast iron with preferred fat (I used cocnut oil).

  2. Spread enough sourdough discard to cover the bottom of the pan (you can even spread it up the sides too to create a higher crust).

  3. Sprinkle salt and pepper to preference.

  4. Chop whatever other ingredients you’ll be using and sprinkle on top of sourdough.

  5. Crack eggs over the top, enough to cover the pan, then lightly “beat” the eggs with a fork, incorporating some of the other ingredients but not pulling up too much of the starter.

  6. Top with cheese if desired.


Pop in the oven at 375 for about 30-40 minutes or until crust and eggs are baked through.
